This diet gets better and better. Once my kids heard I was making Pumpkin Muffins the chocolate chip requests began. These were suppose to be just plain old pumpkin muffins, but my arm was twisted. I’ll admit that it wasn’t hard to do. Did you know that wine and dark chocolate are A-OK on the 21 Day Fix diet? Well, they are! Of course in moderation. And ONLY dark chocolate. No milk chocolate for us Fixers.
These muffins were a huge hit! Both kids scoffed them down like they have never eaten, and I loved them as well! My house smelled amazing while they were cooking. It feels a little more like autumn now that we have some pumpkin around here.
Pumpkin Chocolate Chip Muffins (12 Servings)

- 1/4 Protein
- 1 Carb
- 1/4 Fruit
- 1 tsp
Ingredients
- 1 Cup Pumpkin Puree
- 1 Cup Unsweetened Apple Sauce
- 2 Eggs
- 1/4 Cup Honey
- 2 tsp Vanilla Extract
- 1/4 Cup Dark Chocolate Chips
- 1 1/2 Cup Whole Wheat Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 1 tsp Cinnamon
- Pinch of Salt
- Cooking Spray or Muffin Wrappers
Instructions
- Preheat oven to 350F.
- Combine dry ingredients in a large mixing bowl (flour, baking soda, baking powder, cinnamon, salt).
- Combine wet ingredients in a medium mixing bowl (pumpkin, apple sauce, honey, vanilla, eggs).
- Add wet ingredients to the dry and mix until combined well.
- Fold in dark chocolate chips.
- Either fill a dozen muffin tin with wrappers or spray with cooking spray (EVOO or Coconut Oil).
- Bake for 20 min, or until a toothpick pricked in the center is removed cleanly.
- Allow to cool and enjoy!
